This icebox cake can be done a day in advance of any event or gathering, and a few quick substitutions can help keep the calorie count down as well.
Simply follow the directions above, breaking some of the graham crackers if needed to create a graham cracker "shell" in the dish you choose. Then layer the pudding mixture alternating with another layer of graham crackers.

For the calorie-conscious diner, here are a few simple substitutions: Use low-fat or skim milk; sugar-free pudding mix; non-fat whipped topping; low-fat yogurt; and light cherry pie filling. I used all these ingredients and the dessert still turned out decadent and delicious.
Not a fan of cherries? Substitute strawberry, raspberry or blueberry pie filling.
Or better yet, chocolate lovers rejoice! There also is a great way to make this dessert fit your desires as well.
Approx. 20 whole graham crackers
2 cups cold milk
1 package vanilla instant pudding mix, 6-serving size
1 container thawed non-dairy whipped topping
2 6-oz. containers of vanilla or plain yogurt
2 cans cherry pie filling
Line 13 x 9 inch pan with graham crackers. Also line sides of dish by standing crackers on end.
In a bowl, mix cold milk and pudding with electric mixer on low speed. Let stand 5 minutes. Then blend in whipped topping and yogurt. Mix well.
Spread half of the mixture over the crackers. Add a second layer of graham crackers. Top with remaining pudding mixture. Then add another layer of crackers.
Spread cherry pie filling on top. Chill for 2 to 3 hours. Serve.

You will need to make some simple substitutions on your shopping list.
Start with chocolate graham crackers rather that golden graham crackers.
Then, substitute chocolate pudding for the vanilla pudding. You will use the same amount.
For the yogurt ingredient, be sure to choose plain rather than vanilla flavor.
Finally, rather than purchasing pie filling, purchase a second container of non-dairy whipped topping. Spread this container on the top.
Cover with chocolate sprinkles or drizzle with chocolate syrup.
