Another busy weekend

July 14, 2008 - Kathie Evanoff
I hate weekends that don’t seem like weekends. This weekend was one of those. The entire weekend was spent running errands, volunteering and doing housework. The errands consisted of grocery and other shopping. I am not a shopper and would prefer to stay home rather than busy myself from store to store, but it has to be done and the weekend is usually that time. Volunteering wasn’t quite as bad and I can’t complain about the time I spent at the fair working with the Trumbull County Master Gardeners answering gardening questions and explaining the latest updates on the Emerald Ash Borer. A lot of people stopped at our booth to ask about the insect that is threatening to wipe out the ash tree population in the state of Ohio. Trumbull County has not been quarantined as yet, but purple traps have been placed in several areas throughout the county and once they are harvested in the fall, OSU scientists expect to find evidence that the ash borer is here. People stopping by our booth were interested to see one of the Emerald Ash borers on display, preserved in its little jar, as well as examples of the larvae that do much of the damage to the tree. Also on display was an example of the under-layer of tree bark, showing the tunnels created by the larvae as it eats its way through, disrupting the tree’s natural flow of water and nutrients, which ultimately leads to the tree’s death. If you missed it at the fair, the identification kit is available to see at the Trumbull County Extension office, 520 West Main St., Cortland, during regular office hours. Meals were often disrupted, eaten out at restaurants or quick take-out. As a result, I don’t think I did too badly sticking within my calorie limit. But here’s the low-down. Saturday’s breakfast was at a local eatery. There weren’t many healthy choices, but I was able to get an omelet made with egg substitute, ham and cheese. I didn’t choose any breakfast meat, but did get the hash browns. I didn’t eat everything here, actually only about half, because the servings were pretty large. We managed to have a quick lunch at home before I was off again to the fair. My husband quickly grilled a couple burger for us and mine was put together on a wheat roll with a slice of cheese, lettuce, tomato and brown mustard. I had enough time to grab a bottle of water before heading out the door. I was at the fair until after 6 p.m., so by the time I got home, it was too late to start cooking. Instead, we ordered pizza and I had two slices from a 14-inch pizza. According to, the pizza came to about 362 calories, but those numbers looked too low to me, so I added a couple hundred more. Sunday was equally busy with laundry, cleaning and more errands. We stayed home for a breakfast of scrambled eggs, toast and bacon. I limited myself to one slice of organic bacon processed without chemicals. Lunch was out; however, as by now we were on the go again. This time I ordered a turkey wrap sandwich and a dish of fried greens with garlic and oil. I asked that they toss a hot pepper on the greens, one of my favorite combinations. I chopped the pepper into the greens and put about two tablespoons on the wrap. I also only ate half of the wrap, so I’m not certain of the actual calories, but I’m making a stab at a guess. We were finally home and settled down for dinner, which consisted of mashed russet potatoes, grilled chicken breast and a salad made with romaine leaves, chopped apples, strawberries and pecans with a homemade balsamic vinaigrette. It was a quick weekend and I have to say it was good to get back to work just for the rest.

Saturday's breakfast looks worse than it was. These are egg substitute, low fat cheese and ham and hash browned potatoes. I only ate half of what was on this plate. Breakfast calories: 387
